Oatmeal Pancakes

1 1/2 cups of rolled oats
2 cups of milk
1/2 cup of whole wheat flour
1/2 cup of white flour
1 Tbsp. of baking powder
1 Tbsp. of brown sugar
1 tsp. of salt
1/2 tsp. of cinnamon
2 eggs beaten
1/4 cup of melted butter

Crepes

4 eggs
1 cup of milk
1 cup of water
2 cups of flour
4 Tbsp. of canola oil
1 Tbsp. of sugar
1 cup of whipping cream  for topping
or 1 can of spray whipped cream
Filling
1 1/2 cups of blueberries
1 1/2 cups of strawberries
1/2 cup of  juice
2 Tbsp. of cornstarch
Beat eggs in large bowl until frothy.

Baking Powder Biscuits

2 cups of white flour ( half  white and half  whole wheat)
4 tsp. of baking powder
1/2 tsp. of salt
1/3  cup of soft butter or canola oil
3/4 cup of milk (1%, 2%, or whole milk)
1 cup of sharp or medium grated cheese (optional)
Preheat oven to 425 degrees
Mix dry ingredients
Stir in milk
Form dough into a ball

Yogurt Blueberry Bran Muffins

1 cup of brown sugar
1  cup of bran
1 cup of rolled oats
3 tsp. of baking powder
1/2 tsp of salt
2  cups of plain yogurt
2 eggs
1 cup of oil
2 tsp.  of vanilla
2 Tbsp. of molasses
1 1/2 cups of blueberries
Preheat oven to 350 degrees
Spray muffin tin with cooking spray
Add ingredients in order given
Stir before adding wet ingredients

Corn Bread

3/4 cups of cornmeal
1 1/4 of milk
1 cup of flour
1/3 cup of sugar
3 tsp. of baking powder
1 tsp. salt
1/4 cup of oil ( canola, vegetable, or olive)
1 egg
Preheat oven to 400 degrees
Mix milk and cornmeal together
Let stand for 5 minutes
Add rest of ingredients
Pour into a greased 8×8 cake pan
Bake for 20 to 25 minutes

Banana Bread

4 Tbsp. of canola oil or vegetable oil
1 cup of brown sugar
1 egg
3 mashed bananas
1/2 tsp. of salt
1 tsp. baking powder
1 tsp. of baking soda
2 Tbsp. of molasses
1/2 cups of flour
Preheat oven to 325 degrees F
Mix first 7 ingredients together
Stir in flour
Pour into a greased loaf pan
Bake for 1 hour
