<p>Preheat oven to  350 degrees</p>
<p>1 cup of white sugar</p>
<p>2 eggs</p>
<p>1 tsp. of baking soda</p>
<p>1 tsp. of  salt</p>
<p>1 tsp. of baking powder</p>
<p>3/4 of a cup of  oil (canola or vegetable)</p>
<p>1 cup of flour</p>
<p>1 tsp. of cinnamon</p>
<p>1- 1/2 cups of grated carrot</p>
<p>1/2 cup of chopped walnuts<br />
Grease a 9&#215;9 cake pan</p>
<p>Cream sugar and oil</p>
<p>Add the 2 eggs ( mix well)</p>
<p>Stir in dry ingredients</p>
<p>Fold in grated carrots and walnuts last</p>

<p>This is a great carrot cake recipe, plus it freezes really well. I usually double it, to make a 13&#215;9 cake. You never know<br />
when you will have company come over. If  we go out for dinner to see Family or Friends, it is so easy to have something<br />
ready to grab out of your freezer. Bake for 35-40 minutes. Insert a toothpick in the center of the cake, if it comes out clean<br />
your cake is complete. Let cool and top with cream cheese icing.</p>

<p>Cream Cheese Icing</p>
<p>1/2 cup of icing sugar</p>
<p>4 oz. of softened cream cheese</p>
<p>1/4 of softened butter</p>
<p>1 tsp. vanilla</p>

<p>Beat well with a hand mixer</p>
<p>Enjoy!</p>

1 cup of butter<br />
1 cup of white sugar<br />
2 eggs<br />
3 Tbsp. of cocoa<br />
1 1/2 cups of flour</p>
<p style="text-align: left;">Combine and spread on a full size cookie sheet.<br />
The batter is really thick, so I put cold water on my<br />
hand and press on in to the pan.  Bake at 350 degree<br />
oven  for 15 minutes.</p>
<p style="text-align: left;"><strong>Middle Layer</strong><br />
1 1/2 cups of butter<br />
4 Tbsp. of flour<br />
2 cups of brown sugar<br />
1 can of sweetened condensed milk<br />
4 Tbsp. of corn syrup</p>
<p style="text-align: left;">Heat until the sugar has dissolved.<br />
I melt this in the microwave.<br />
Pour over the bottom layer, and put<br />
back in the oven for 15 minutes. Leave<br />
your oven at 350 degrees. Cool your cake<br />
and cut along the edge. I did this before I<br />
put the chocolate topping on, so its easier to slice<br />
into squares.</p>
<p style="text-align: left;"><strong>Top</strong></p>
<p style="text-align: left;">8 oz. of chocolate chips<br />
4 Tbsp. of butter</p>
<p style="text-align: left;">Melt slowly in microwave or stove top.<br />
Spread on cake and cool a bit more in the fridge.<br />
Cut into squares and try not to eat too many at one<br />
time.  This is my favorite ! I just made it for Christmas<br />
and am hoping there will be some left by then. Enjoy!</p>

<h2>Pumpkin  Pie</h2>
<p>Oil Pie Pastry<br />
( this makes 2 -9 inch one crust pies)</p>
<p>2 cup plus 4 Tbsp. of flour<br />
1 tsp. of salt<br />
2/3 cup of canola oil<br />
4-6  Tbsp. of cold water</p>
<p>Mix flour, salt, and oil together<br />
Stir well and then mix in  water<br />
Put a a bit of oil on your hands<br />
Gather the dough and form into a ball</p>
<p>Roll dough adding a little flour as you go to prevent sticking</p>
<p>You can use 2 sheets of wax for easier rolling</p>
<p>Make your circle 1 inch larger than pie plate</p>
<p>Place and arrange into your pie plate</p>
<p>Prepare your pumpkin filling</p>
<p>Pumpkin Pie Filling</p>
<p>Preheat oven to 400 degrees;</p>
<p>1 29 0z. can of pure pumpkin<br />
1 1/2 cups of sugar<br />
1 tsp. of salt<br />
1 1/2 tsp. of ground cinnamon<br />
1 tsp. of ground cloves<br />
1 tsp. of ground ginger<br />
4 eggs<br />
2-12 oz. cans of evaporated milk</p>
<p>Mix all ingredients well<br />
Pour evenly into your prepared pie crusts<br />
Bake for 15 minutes at 400 degrees<br />
Then bake at 350 degrees for 40-50 minutes<br />
Insert knife into center of pie<br />
It should come out clean<br />
Have with whipping cream or ice cream<br />
This is a must for Christmas and Thanksgiving at our house.<br />

2/3  cup of flour<br />
1/2 cup of chocolate chips (optional)</p>

Mix butter, sugar and cocoa<br />
Stir in eggs and vanilla<br />
Add flour and chocolate chips<br />

Bake for 30 minutes<br />
Cool and spread with chocolate icing</p>

<p style="text-align: left;">3 Tbsp. of soft butter<br />
2 Tbsp. of cocoa<br />
1  1/2 cups of icing sugar<br />
2 Tbsp. of milk<br />
Add a little more milk for a thinner icing<br />
Mix well and ice your cake</p>
<p style="text-align: left;">When I make this recipe for Christmas,<br />
I put crushed candy canes on top.</p>

If you like chocolate, you will love this cake.</p>

<p style="text-align: left;">Stir in milk and vanilla</p>
<p style="text-align: left;">Pour into a 9&#215;13 greased cake pan</p>
<p style="text-align: left;">Topping</p>
<p style="text-align: left;">3 cups of boiling water</p>
<p style="text-align: left;">3 Tbsp. of cocoa</p>
<p style="text-align: left;">1 1/2 cups of sugar</p>
<p style="text-align: left;">Stir well and slowly pour on cake</p>
<p style="text-align: left;">Bake at 350 degrees for 30 to 35 minutes. Its best served hot with ice cream or<br />
whipping cream.  Top with shaved chocolate and raspberries or chocolate syrup and strawberries.<br />
This chocolate desert is requested at many of our Family dinners threw out the year. This would<br />
make a great Valentine desert as well. Half the recipe for a dinner for two.</p>
