My Dad’s Cookies

1 cup of butter (soft)

1 cup of white sugar

1/2 cup of brown sugar

 2 Tbsp of molasses

1 tsp of baking soda

1 tsp of baking powder

1 tsp of nutmeg

1 tsp of cinnamon

1 tsp of allspice

1 tsp of salt

1 egg

1 tsp of vanilla

1 1/2 cups of flour

1 1/2 cups of rolled oats

1 cup of fine coconut

Preheat oven to 350 degrees

Mix all ingredients in a large bowl

Roll into 1 inch balls

Bake on large cookie sheet for 12 to 15 min.

I like to double this recipe and bake one pan of cookies and freeze the rest.

Shape the cookie dough into a 12 inch tube, 2 inches across.

Wrap in sarran and freeze.

Bake same as above.

Thaw slightly and slice 1/4 of a inch thick.
