Fruit Crepes With Whipped Cream

crepes
4 eggs
1 cup of milk
1 cup of water
2 cups of flour
4 Tbsp. of canola oil
1 Tbsp. of sugar

1 cup of whipping cream  for topping
or 1 can of spray whipped cream

Filling

1 1/2 cups of blueberries
1 1/2 cups of strawberries
1/2 cup of  juice
2 Tbsp. of cornstarch

Beat eggs in large bowl until frothy.
Add remaining crepe ingredients.

Mix well and refrigerate for 1 – 2 hours.
Place 2 Tbsp. of batter in a greased hot
crepe pan or frying pan. Tip pan to swirl
batter on the bottom of the pan. Brown
lightly on both sides. Stack with wax paper
in between each crepe.

Filling

Stir cornstarch into juice in a medium bowl.
Add fruit and cook in the microwave until thick.
Stir every couple of min. If you are using a tart
fruit add sugar to taste. I would start with 1/4 cup.

Top with whipped cream. Crepes are good for
a weekend brunch or holiday breakfast. You
can make ahead the day before, just be sure
they are well covered. To reheat place on a cookie
sheet covered with foil. Place in a 350 degree oven
until warm.

Baked Salmon

1 large salmon fillet(3-4 lbs)
3 lemons
1/4 cup of butter
1 med. onion sliced thin
garlic powder
smoked paprika
pepper

Preheat oven to 375 degrees.
Place a extra long piece of foil
on a full size cookie sheet.
Add spices, butter, thinly sliced onions
and lemons to both sides of the salmon on foil.
Wrap tight with a double layer of foil.
Bake in the oven for 40 min.
Flip salmon over after 20 min.
Your salmon is done when it is light pink
all the way threw. I usually serve this with
rice, vegetables, and lemon wedges.

Homemade Kahlua

kahlua
3 cups of brown sugar
2 cups of water

Boil sugar and water together for 8 min.
Once this has cooled, add the rest of
the ingredients.

26 oz. of vodka
6 Tbsp of instant coffee (Starbucks)
2 tsp. of vanilla
1/2 cup of dark rum

This makes 2 26oz bottles.
It is ready immediately.

Carmel Cake Squares

carmelcake
1 cup of butter
1 cup of white sugar
2 eggs
3 Tbsp. of cocoa
1 1/2 cups of flour

Combine and spread on a full size cookie sheet.
The batter is really thick, so I put cold water on my
hand and press on in to the pan.  Bake at 350 degree
oven  for 15 minutes.

Middle Layer
1 1/2 cups of butter
4 Tbsp. of flour
2 cups of brown sugar
1 can of sweetened condensed milk
4 Tbsp. of corn syrup

Heat until the sugar has dissolved.
I melt this in the microwave.
Pour over the bottom layer, and put
back in the oven for 15 minutes. Leave
your oven at 350 degrees. Cool your cake
and cut along the edge. I did this before I
put the chocolate topping on, so its easier to slice
into squares.

Top

8 oz. of chocolate chips
4 Tbsp. of butter

Melt slowly in microwave or stove top.
Spread on cake and cool a bit more in the fridge.
Cut into squares and try not to eat too many at one
time.  This is my favorite ! I just made it for Christmas
and am hoping there will be some left by then. Enjoy!

Christmas Eggnog (no eggs)

eggnog
1 40 gram pkg. of vanilla pudding
4 tsp. of vanilla
2 tsp. of cinnamon
1 tsp. of nutmeg
8 cups of 3% milk  (1/2 gallon)

Mix well and store in the fridge.
Mix with 1 oz. of spiced rum per glass or
plain. Sprinkle with nutmeg.
Serve with a candy cane or a cinnamon stick.

Betty’s Irish Cream

1 1/2 cups of rye
1 cup of cream
1 can of sweetened condensed milk
1 tsp. of instant coffee
2 tsp. of chocolate syrup
2 eggs (optional)

Blend rye and eggs well.
Add rest of ingredients  and mix well.
Pour into a bottle and store in the fridge.
Use before the expiry date on your cream.
If you put eggs into your Irish cream, I would use within 3 days to be safe.
Serve in coffee or on ice.

Friendship Spiced Tea

1- 24 oz. pkg. of lemon drink mix
1-48 oz. pkg. of orange tang mix
3/4 to 1 cup of sugar or 1/2 cup of splenda
1/2 cup of instant tea
2 tsp. of cinnamon
1 tsp. of ground cloves

Mix 2-3 tsp. in a cup with boiling water.
This spiced tea makes a nice gift.
I gave this to a co- worker and she raved
about it for years. Put it in a nice jar with a label.

Milkshake

Flavors of choice

chocolate syrup
carmel syrup
strawberries
vanilla extract
blueberries
raspberries
butterscotch syrup
saskatoon berries
peaches
black berries
mangoes
bananas

Add milk and ice cream to your blender and what ever flavor you like.
Blend well and taste often to make sure it is just right. Enjoy!

Holiday Punch

2 cups of fresh or frozen cranberries
2 L. of ginger ale
2 cans of frozen cranberry juice
2 cans of frozen lemonade
6 cups of water

Make a ice ring using some of the lemonade and 1 cup of cranberries
I use a angel  food cake pan for the ice ring, freeze overnight.
Mix all together in your punch bowl. Add ice ring
Garnish with sliced  lemons and cranberries.

Add rum, vodka, or gin (optional)
