Milkshake

Flavors of choice

chocolate syrup
cocoa and sugar
strawberries
vanilla extract
blueberries
raspberries
butterscotch syrup
Saskatoon berries
peaches
black berries
mangoes
bananas

Add milk and ice cream to your blender and what ever flavor you like.
Blend well and taste often to make sure it is just right. Enjoy!

Holiday Punch

2 cups of fresh or frozen cranberries
2 L. of ginger ale
2 cans of frozen cranberry juice
2 cans of frozen lemonade
6 cups of water

Make a ice ring using some of the lemonade and 1 cup of cranberries
I use a angel  food cake pan for the ice ring, freeze overnight.
Mix all together in your punch bowl. Add ice ring
Garnish with sliced limes,  lemons and cranberries.

Add rum, vodka, or gin (optional)

Chocolate Truffles

3 cups of chocolate chips
1 can of sweetened condensed milk
1 Tbsp. of vanilla
1 inch paper cups (craft store)

Melt slowly in a glass bowl in the microwave for 1 minute a time
until melted. Stir every minute. Do not over heat. Place in fridge
until your chocolate mixture is cool enough to handle
Roll into 1 inch balls. Then roll the truffles
into crushed candy canes, crushed pecans, colored
coconut, cocoa, icing sugar, sprinkles of your choice.
Place into gold, silver, or Christmas paper cups.
Truffles freeze well. I make them 2 or 3 weeks
before Christmas.

Lentil Soup

1/2 cup of barley
3/4 cup of lentils
6-8 cups of beef  broth
1 bay leaf
2 cups of cubed beef
1 cup of chopped onion
1 cup of chopped celery
2 chopped garlic cloves
2 cups of canned chopped tomatoes
2 beef bouillon cubes
1 tsp. of Worcestershire sauce
1/4 tsp. of pepper
1 tsp. of salt

1/2 tsp. of thyme
1/2 cup cubed chopped carrots
1/2 cup of frozen peas
1/2 cup of frozen corn

Combine barley, lentils, and bay leaf in a sauce pan
Add water to cover and boil for 5 minutes
Remove from heat and let soak for 1 hour
Boil again for 30 minutes
Saute onions, celery, and crushed garlic
Add rest of ingredients
Simmer until lentils and vegetables are tender
If you would like dumplings in this soup, go to main dishes (Chicken stew with dumplings) for the recipe.
When I add dumplings to soup, I make into  1 inch balls.
You can substitute the beef and beef broth with chicken and chicken broth.
There is nothing like hot hearty soup on a cold day.

Tom Kha Gai Soup

2 cloves of crushed garlic

3 fresh lemon grass or 2 Tbsp. of dried lemon grass

3-4 chopped hot chili peppers

1-1 1/2 lb. of cubed cooked chicken

1/4 cup of Thai sweet chili sauce

2-3 peices of galangal slices

2 tsp. of tamarind paste

1-2 Tbsp. of fish sauce

3 cans of coconut milk

2 packages of coconut powder

(you can use 2-3 more cans of coconut

milk if you do not have coconut powder)

2-3 cups of water if you used coconut powder
light soya sauce (optional)
sliced mushrooms
sliced baby corn
grated carrots
salt to your taste
1 small sliced zucchini

Brown the cubed chicken
Set a side in a bowl
Add rest of ingredients
Simmer on low

Turkey and Stuffing

Take your turkey out of the freezer 3 days before you are going to cook it and place in your fridge to thaw out.

If there is still frost on it in the morning that you are cooking it, set it in ice cold water in your sink. Never leave your turkey at room temperature.

When it has thawed out put the turkey back in your fridge.

Check the weight of the turkey and decide on the time that you want to have your dinner.
I like to have left overs, so I buy 1 lb. of turkey per person. Hint – I buy 2 – 12 lb. turkeys for
24 people. Its easier to wash and lift. When I am doing two turkey’s I would use the 12 lb cooking time and add 30-40 minutes. The more you put in your oven the longer it will take. Use a meat thermometer and check it often. I start my potatoes on medium heat, a hour before the dinner.

6-8 lbs.   3 – 31/2 hrs.
8-12  lbs.  31/2 – 41/2 hrs.
12-16 lbs.  41/2 – 51/2 hrs.
16-20 lbs.    51/2- 61/2 hrs.
20-24 lbs.    61/2 – 71/2 hrs.

The internal temperature must be 185 degrees
Insert a meat thermometer into the thickest part of the breast
Preheat your oven to 350 degrees

Wash the turkey inside and out
Place into a roasting pan breast side up
Be sure that you remove the neck and bag from inside
Make the stuffing

Stuffing

2 or 3 days before your dinner, cube the bread for your stuffing
Put bread cubes in a bowl, leave partly uncovered so the cubes will dry out.
You can chop your onion and celery the day before to make your life easier.
The more dinners you do the less stressed you will be.

8-12 cups of bread crumbs
1 large of chopped onion
1/2 tsp. of sage (optional)
2-3 tsp. of poultry seasoning
salt and pepper
1/2 tsp. of garlic powder
1/2 – 3/4 cup of melted butter
1 cup of grated carrot (optional)
1 peeled and chopped apple (optional)
1 cup of dried cranberries (optional)
cheese cloth stuffing bags (optional)

Mix all together adding the melted butter last.
Stuff your turkey right before you put it in the oven.
To be safe never stuff  before.
If you have stuffing left over, wrap it in foil and place beside the turkey for the last 2 hrs.
Bake uncovered until it is as brown as you want it.  If your stuffing is getting to dark , cover with a small piece of foil. While I am doing all this work, I think of all the People and things in my life that I am Thankful for.

This is what I used for a turkey dinner for 20 people.

20 lbs. of turkey
3 doz. whole wheat tray buns, 2 for the dinner and 1 to go with the left overs
3 cans of whole berry cranberries
10 cups of mashed potatoes
5 cups of turnip
5 cups of carrots
1 jellied salad
2 pies
1 box of Christmas oranges
Chocolate Almonds
ice cream or whipped cream
coffee
10  2 L. bottles of pop

My Guests stayed overnight. There were lots of left overs for Lunch.

My Daughter did her first turkey Dinner, this past Thanksgiving. She

called at least 25 times, so I thought I would share this with Her and

Baking Powder Biscuits

2 cups of white flour ( half  white and half  whole wheat)
4 tsp. of baking powder
1/2 tsp. of salt
1/3  cup of soft butter or canola oil
3/4 cup of milk (1%, 2%, or whole milk)
1 cup of sharp or medium grated cheese (optional)

Preheat oven to 425 degrees
Mix dry ingredients
Stir in milk
Form dough into a ball
Roll on lightly floured surface to 1/2 inch
Cut into 2-3 inch circles
Bake for 12 – 15 minutes

Yogurt Blueberry Bran Muffins

1 cup of brown sugar
1  cup of bran
1 cup of rolled oats
3 tsp. of baking powder
1/2 tsp of salt
2  cups of plain yogurt
2 eggs
1 cup of oil
2 tsp.  of vanilla
2 Tbsp. of molasses

1 1/2 cups of blueberries

Preheat oven to 350 degrees
Spray muffin tin with cooking spray
Add ingredients in order given
Stir before adding wet ingredients
Fold in blueberries last
This recipe makes 12 large muffins
Bake for 20 – 25 Min’s.

Pumpkin Pie

Pumpkin  Pie

Oil Pie Pastry
( this makes 2 -9 inch one crust pies)

2 cup plus 4 Tbsp. of flour
1 tsp. of salt
2/3 cup of canola oil
4-6  Tbsp. of cold water

Mix flour, salt, and oil together
Stir well and then mix in  water
Put a a bit of oil on your hands
Gather the dough and form into a ball

Roll dough adding a little flour as you go to prevent sticking

You can use 2 sheets of wax for easier rolling

Make your circle 1 inch larger than pie plate

Place and arrange into your pie plate

Prepare your pumpkin filling

Pumpkin Pie Filling

Preheat oven to 400 degrees;

1 29 0z. can of pure pumpkin
1 1/2 cups of sugar
1 tsp. of salt
1 1/2 tsp. of ground cinnamon
1 tsp. of ground cloves
1 tsp. of ground ginger
4 eggs
2-12 oz. cans of evaporated milk

Mix all ingredients well
Pour evenly into your prepared pie crusts
Bake for 15 minutes at 400 degrees
Then bake at 350 degrees for 40-50 minutes
Insert knife into center of pie
It should come out clean
Have with whipping cream or ice cream
This is a must for Christmas and Thanksgiving at our house.

Brownies

Brownies

1/2 cup of soft butter
1 cup of sugar
1/4 cup of cocoa
1 tsp. of vanilla
2 eggs
2/3  cup of flour
1/2 cup of chocolate chips (optional)

Preheat oven to 350 degrees
Grease an 8×8 pan
Mix butter, sugar and cocoa
Stir in eggs and vanilla
Add flour and chocolate chips
Spread into pan
Bake for 30 minutes
Cool and spread with chocolate icing

Chocolate Icing

3 Tbsp. of soft butter
2 Tbsp. of cocoa
1  1/2 cups of icing sugar
2 Tbsp. of milk
Add a little more milk for a thinner icing
Mix well and ice your cake

When I make this recipe for Christmas,
I put crushed candy canes on top.
