<h2>Pumpkin  Pie</h2>
<p>Oil Pie Pastry<br />
( this makes 2 -9 inch one crust pies)</p>
<p>2 cup plus 4 Tbsp. of flour<br />
1 tsp. of salt<br />
2/3 cup of canola oil<br />
4-6  Tbsp. of cold water</p>
<p>Mix flour, salt, and oil together<br />
Stir well and then mix in  water<br />
Put a a bit of oil on your hands<br />
Gather the dough and form into a ball</p>
<p>Roll dough adding a little flour as you go to prevent sticking</p>
<p>You can use 2 sheets of wax for easier rolling</p>
<p>Make your circle 1 inch larger than pie plate</p>
<p>Place and arrange into your pie plate</p>
<p>Prepare your pumpkin filling</p>
<p>Pumpkin Pie Filling</p>
<p>Preheat oven to 400 degrees;</p>
<p>1 29 0z. can of pure pumpkin<br />
1 1/2 cups of sugar<br />
1 tsp. of salt<br />
1 1/2 tsp. of ground cinnamon<br />
1 tsp. of ground cloves<br />
1 tsp. of ground ginger<br />
4 eggs<br />
2-12 oz. cans of evaporated milk</p>
<p>Mix all ingredients well<br />
Pour evenly into your prepared pie crusts<br />
Bake for 15 minutes at 400 degrees<br />
Then bake at 350 degrees for 40-50 minutes<br />
Insert knife into center of pie<br />
It should come out clean<br />
Have with whipping cream or ice cream<br />
This is a must for Christmas and Thanksgiving at our house.<br />
