2 eggs
1 cup of sugar
1/2 cups of canola oil
1 cup of buttermilk
4 Tbsp. of cocoa
2 cups of flour
1 tsp. of baking powder
1 cup of hot chocolate (stir 2 heaping Tbsp. of hot chocolate
powder into 1 cup of boiling water)
1 tsp. of vanilla
1 tsp. of baking soda
1 tub of Betty Crocker icing per 9 x 13 cake.
Preheat the oven to 350 degrees
Spray or butter a 9 x 13 cake pan
Mix eggs, sugar, oil, buttermilk, vanilla, baking soda, and
cocoa in large bowl. Slowly stir in hot chocolate, flour, and baking
powder. Blend or beat until smooth. Pour into a greased 9 x 13
cake pan. Bake for 20 – 30 minutes or until toothpick comes out
clean. Do not over bake.
To make the skateboard cake above, you will need 3 – 9 x 13
cake. Trace your skateboard. Cut cake to fit. It is much easier
to ice when the cake is frozen. I iced the cake in three sections.
Put it together on the skateboard the day of your party and add
a bit more icing to attach your cakes. When you are doing the
finishing touches to the icing, dip your knife into cold water.
This will give your cake a smooth finish. I had 40 people to
my sons birthday party. Everyone loved this cake!
