Oil Pie Pastry
( this makes 2 -9 inch one crust pies)
2 cup plus 4 Tbsp. of flour
1 tsp. of salt
2/3 cup of canola oil
4-6 Tbsp. of cold water
Mix flour, salt, and oil together
Stir well and then mix in water
Put a a bit of oil on your hands
Gather the dough and form into a ball
Roll dough adding a little flour as you go to prevent sticking
You can use 2 sheets of wax for easier rolling
Make your circle 1 inch larger than pie plate
Place and arrange into your pie plate
Prepare your pumpkin filling
Pumpkin Pie Filling
Preheat oven to 400 degrees;
1 29 0z. can of pure pumpkin
1 1/2 cups of sugar
1 tsp. of salt
1 1/2 tsp. of ground cinnamon
1 tsp. of ground cloves
1 tsp. of ground ginger
4 eggs
2-12 oz. cans of evaporated milk
Mix all ingredients well
Pour evenly into your prepared pie crusts
Bake for 15 minutes at 400 degrees
Then bake at 350 degrees for 40-50 minutes
Insert knife into center of pie
It should come out clean
Have with whipping cream or ice cream
This is a must for Christmas and Thanksgiving at our house.
